So I just uninstalled it now and reinstalled the mod and tried again. It appears to be working now.
I monitored the flight path and my ship is now flying in the hexagon pattern. Not sure why that worked but it is.
There might be something wrong with yours, because mine works perfectly. I just checked it, sent a ship to explore, and saw if it followed the hex route. It follows it nicely. Game version v8.03, latest hotfix installed.

I have ensured that it is the default option and there are no other orders given to the ship. When I approve it, my ship begins flying in random directions. Not sure what I am doing wrong.
The only other mod I am using is the crystal rarities mod.
Scout just flies in random directions and doesn't follow the hexagon pattern as shown in the screenshot.
Running the game with all of the latest DLCs and 8.0 diplomacy update.
Make sure you configured the default behavior for that ship and its not running any other order.. like the default explore commands. Check the 3rd attached image, it shows the order queue is empty and default order is set to sector explorer.
Also, there are some mod makers who base their mods on mine and forget to change the mod ID which will cause malfunctions during initialization.
