I love it! I like that its heavily pulling from Star Trek, but has its own sharp aesthetic and is adjusted nicely for Stellaris needs.
"Space Adventure" - intentionally framed to be an off-brand Star Trek
"Galactic Union of Systems" - off-brand United Federation of Planets

That's just a thing that happens when ship models don't have defined points for turrets, it fires from the ship's origin point (center of model, ideally)
I also suggest halving the texture resolution on the normals and speculars. Don't really need them at same res as the diffuse to look good.
And if you aren't already, i suggest using nVidias latest Texture Tools Exporter:

It has the best compression quality I've seen yet for DXT (BC3) compression.

You really elevated the original designs and made them your own.
As far as I know, it should work fine with the current setup. I'll try to test it out more.
Regarding the firing from the sun part, it's easy: don't use it with NSC for now.
