Otherwise, vampirees would be like "hey, even if you are staying inside a house, you shouldn't have any windows and such to stay alive" and you wouldn't see any goth like / vampire themed churches or villas designes.
Implementing a fall damage reduction would also be really nice! In much of the lore vampires seem to be able to descend from crazy heights without enduring any severe abrasion or injury.
blood bank map/facility?
Zombie bite = requires more blood to heal up (if blood not met then user dies or body unable to fight zombie virus then die)
Thirst for blood/blood hunt instinct (ability to see humans in certain mini map radius)
expansion lycanthropy - werewolf as its enemy??

It would offset the burden and pressure of the other methods down below:
I don't know if you're familiar with it, but Snake's Mod has a really cool hunting mechanic. Essentially if you are armed with either the smaller MSR700 (varmint) or the heavier MSR788 (winchester) and creep through trees right clicking them (hunting skill) until an animal eventually appears in this pop-up feature and you shoot at it (aiming skill). Finally the carcass of the animal materializes and you wield a "slapper knife" to butcher it (cooking skill). And I believe you can only successfully hunt one animal per day.
A vampire's blood repast could be similar, too. Instead of an animal it could be a survivor, and you'd use claws or whatever else which was appropriate. Success rates could be based off agility, strength, etc, and if you succeed a scream (meta event) occurs with a body now shown for you to extract blood and so forth.
The other method as aforementioned is, of course, to allow human players to sacrifice their own blood through donation (but should probably come with a health penalty of 25-35%, and maybe even more if you possess physical weaknesses). It wouldn't be hard to relegate this system either as over donation like any dynamic act could lead to anemia or worse.
However it is important to note that donation through blood would require a healthy sized group of players on multiplayer and wouldn't really be viable for singleplayer or smaller circles, but it's still a super interesting one!
Finally there's science and other formulas! Perhaps combining but a mere few drops of blood with x ingredients to synthesize a decent drink. This would likely require a range of rarer herbs, items, and some sort of scientific laboratory utensil so it shouldn't be easily viable at the start.
Just food for thought~
On the note regarding the various tiers of sun damage - this is a great idea and allows for various types of players to undergo different severities of difficulty. In my opinion more customization is always better - within the parameters of your vision as creator, of course.
The mild one should feel quite casual and leisurely - it's there, but won't outright burn you in minutes. Conversely speaking the extreme weakness variant I feel achieves its goal of really making you heed the daylight hours and always be on the move, if you do venture outside, between houses. In sum: so far so good.
Moreover (and after weather effects get implemented as this will be hugely fun for taking advantage of rain, fog, and heavy snow) I think it would be interesting to see the following:
Vampires possess a few weaknesses depending on which (of the countless) lores you wish to adopt (or mix together) - in many of them they are deathly allergic to sunlight and silver. Garlic feels a bit 19th century, but is nonetheless rather fun as a gimmick for cooking and could perhaps lead to brief nausea.
Extended exposure to sunlight can and should potentially cause burns (see the agonizing negative trait Burn Ward Victim in the amazing More Traits mod, although not as severe at first since they begin with a score of charred injuries) which might start as one but blister up to several all over the vampire's body the longer they seek to defy the sun - ultimately forcing them to take respite from their blatant disregard of our native star.
HEre my suggestion:
-we shall understand wich type of vampire you want to represent or the more types you want
In the literature you can read about vampires wich can walk during day, but must stay covered by the full by clothes, vampires that can't walk during days and vampires that can normally walk during day.
ABout the combat: vampires shall be war machines: can run forever, can sprint forever, can push down any zombie.
For example getting shot by others shall be a minor problem if the weapon is not of high caliber.
Food is the main problem for the vampires with the sun. But the gameplay of this game make it to wait all the day very boring, so i suggest to leave that an option.
ABout blood: for several lores vampires can suck blood from deads, for others only from the living.
My suggestion is: make player use animation of zombies eating on corpses. IF you have seen there is also a mod wich add npc. Maybe in future you can make player feed only on human or non zombiefied dead.
Food shall not affect vampires, but vampires need to stay with humans to feed. Maybe in future you can have interactions with npc just taking some blood not killing them. But if you don't have any npc around the risk is to starve.
Vampires--->war machine BUT----> it will die with no fuel and it's nothing without humans giving him blood (peacefully or by force)
-Vampires skin (but we can find several dead cold skin already in other mods)
-THe only way to heal is be is to be fed. If you are well fed you heal fast, if you are medium fed you heal slower, if you are not feed you won't heal at all and medicine won't heal you.
-vampires don't get disease so can't become zombies or get cough
-vampires are dead so they don't suffer from cold as humans
-vampires see during night like humans see during the day

All the other things you have said are totally valid, and could possibly become part of the mod in the future.
There are plans for NPCs to be released in updates for the game (as far as I'm aware), once they arrive I do think having "Human Farms" or something similar will be something I want for this mod. The animations for taking blood etc are all great ideas and I'd love for that to be part of it - Just slow and steady at the moment!
