Also, if you're using Lifestyles mod, make sure minimum water remaining stays above 5 or something or all toilets will become unusable, unless you can legit plumb them with a rain collector barrel.
I changed min days water goes bad to 1, and max to 3, for testing purposes, I then waited 2 weeks for the water to shutoff and it didn't go bad after the aformentioned 1 - 3 days.
Can someone confirm, or am I doing something wrong? B42 unstable, latest patch as of writing.
Also, thank you so much @albion for your work. This mod is really good and a must-have for my playthroughs, I've always played with it. Thank you, thank you so much for creating and maintaining it.

Currently on day 70 without disabling the mod.
Water from sinks have started to drain, is tainted and the mod is working as intended.
Double checked sandbox settings, and sure enough, minimum was 1 day after shut-off and maximum was 2 days after shut off.
Didn't change any settings or do anything differently, but it works now for unknown reasons.

Makes the fight for water worth it, instead of emptying a gas station's year old sink for 20 liters of fresh spring water.
water not becoming tainted or draining on the first day is a bug that happened previously, it probably re-emerged with the massive rewrites i've had to do between patches, i'll look into that for the next update
