I found three in 15 minutes...on my starter planet. I would like to have the sitar mod, but not if every instrument is a sitar.

that is, unfortunately, impossible with the way instruments work in this game.
it takes the track, and changes the soundfont. there is no way to make it play it with the original soundfont, unless you made a custom instrument for every single track.
