You use the weapon switch hotkey (see bottom left of your screen) and then your trigger

Roll not so much, pitch however should be as far away as possible.

Is there a problem it fins are near the center of mass (pitch and roll)

When you are losing pitch it means you dont have enough elevator authority. Add more small fins (you can hide then) and balance the aircraft with weightblocks. Adding weightblocks (but not too much) has the strange but welcome benefit of adding speed. (Stormworks logic)

can u just tell me some tips about making a fast jetfighter, at certain speeds fans make me lose pitch and sometimes pitch doesn't work at high speeds unless it's inverter (why do these things happen)

I didnt use the stock gyro. That gyro is meant for helicopters. For the pitch stabilizers i used pid's, indeed

These are infact the general purpose missiles, they lock on both air and ground targets.

That is normal. You lose alot of weight shooting those missiles. You have to trim it after firing ordnance, Its in the description after all!

chaff and rwr works great but there is a balance problem it seems
it seems to be back heavy when i fire missles it seems to want to point the plane up

@DavidBOSS21 Its to your left, right next to your engine start buttons.

Bullets hitting the aircraft during negative g's is sadly just a stormworks thing. Only way to counter it is to move the barrels waaay forward or one more block down. Both options look really ugly.

bullets also have a tendency to hit the front of the plane when pulling some g's pointing the plane down

A little battery drain is simply a given with more detailed creations. I suggest putting it in the workbench when not actively using it.
