There are quite a few reasons, the main being queer people simply enjoying the character and including her in a lot of queer (especially wlw) works. Then she officially got a girlfriend so that a big thing for the lesbian.

Then is come to trans people, well big thing was "Hatsune Miku Created Minecraft" meme, that was direct response to transphobia of notch
