You will Make the faction that has these ships angry.
Make a boarding ship with lots of boarding shuttles, get the desired ship to 30% hull or less (NOT ZERO). Board the ship, taking it over, go to build menu as the ship once it is yours, and SAVE design.
Yes you might need to redesign/fix some issues, but its saved to your files now.
You can subscribe to each ship individually if they are posted on the workshop. If the author of the factionpack has uploaded each ship individually, you can subscribe to them individually. Not all faction pack authors have done this.
In the case of this faction pack I'll work to upload each design individually to make this possible for you. You should be able to click on the name of each ship in the Steam workshop's faction pack's description to be hyperlinked to the workshop page for that ship.
The base game doesn't include the ability to play as a faction pack, no.
You can however accomplish your goal by getting your hands on the blueprints for each ship or station included in the faction pack. There's a few ways to do this.

By default the blueprint files for each ship in this faction pack can be found in:
C:\Program Files (x86)\Steam\steamapps\workshop\content\445220\2859765330
If you copy and paste each .xml, .meta, and .png file from this folder into your Avorion ships folder:
C:\Users\ (local user) \AppData\Roaming\Avorion\ships <-- (replace "local user" with your own Windows user)
Then you will see each ship in this faction pack available to you in the ship builder in-game.
Note that AppData may be a hidden folder and may not be visible to you depending on your Windows permissions.
