Ingredients
CHICKEN
1/3 c. plain whole-milk yogurt
2 cloves garlic, grated or finely chopped (about 2 tsp.)
1 tbsp. fresh lemon juice
1 tbsp. garam masala
1 tbsp. grated or finely chopped peeled ginger
2 tsp. kosher salt
1 tsp. Kashmiri chili powder (or 3/4 tsp. paprika plus 1/4 tsp. cayenne)
2 lb. boneless, skinless chicken thighs, cut into 1 1/2" pieces
MAKHANI SAUCE & ASSEMBLY
5 tbsp. unsalted butter
1/2 c. tomato paste
1/2 serrano chile, seeded, finely chopped
1 tbsp. grated or finely chopped peeled ginger
1 tsp. garam masala
1 tsp. ground cumin
1 tsp. Kashmiri chili powder (or 3/4 tsp. paprika plus 1/4 tsp. cayenne)
1 c. heavy cream
1 tbsp. dried fenugreek leaves or kasoori methi (optional)
1/2 tsp. (or more) kosher salt
1/4 c. finely chopped fresh cilantro
Cooked basmati rice or naan, for serving
