you only really weigh it when the district manager shows up and he does it by the book
but he shows up only when they know it's REALLY busy or when he wants to help which is not that often
but usually you have to make sure you weigh it and use the correct amount so you don't overuse or underuse a product
it's not every single thing it's only sauce, cheese, and some of the toppings cause like the pepperoni you just need to count how many go on there
stuff that's like not perfectly cut like ham or pepperoni you usually weigh cause you can't really count
but everyone usually just weighs it a few times and once you can visually see how much goes on it, then you just do it from memory
4 ounces of shredded provolone, 3 ounces of pizza sauce, 3 ounces of pizza cheese. engrave that into your mind

they don't make you wear anything for your hair while making the pizza. They also don't make you wear gloves either when touching the food because technically the oven is going to burn off the germs or whatever.
