It's not that Starbound could be fixed with a few hundred mods the problem is like minecraft they update the game constantly and when they do you have to wipe your saves and mods from their continuous trolling from the devs of the game. ♥♥♥♥ all of that!

I'd recommend you start with Frackin' Universe. It's one of the most popular mods and adds a ton of content in all areas altogether. Read up on how to use it first tho to make sure it works correctly. For convenience you might want to get Inventory overhaul mods as well. Better Storage mod is also recommended to make the storing of items more user-friendly. If you're not a fan of droping mats/resources on death, but would still want to play with hunger mechanic, you can use Hunger Enabler for Casual Mode mod. To be fair there's more than 8k mods out there, I usually dig through them and check whatever catches my eye.
