Memory leak issues can cause what you are describing. I would recommend in general saving often and going back to your most recent save, which can hopefully reset the memory leak issue.
The Warband engine is old and Produno was high as ♥♥♥♥ when programming most of the game, hence the propensity for memory leak issues and errors. Joking about Produno, he is an awesome programmer and has gotten more mileage out of a significantly outdated Warband engine than anyone has a right to.
Enabling cheats and using Morphs editor can also increase memory leak problems and glitches.
