What does the other Cola do?
I noticed on the finale when bringing mike, another cola spawns with you in the safe room, is it needed for anything, what do we do with it?

Nothing, there's not supposed to be any other cola than the single cola needed for Mike that should be consumed upon successfully bringing it in the map it's in.
Sounds like L4D2's inventory saving system is still throwing a fit over Mike and somehow preserving the cola.

Weird, well it always seems to spawn for me when bringing mike, because when I don't have mike the cola doesn't show up. I don't have any mods that should be messing with the inventory saving system (especially since none are conflicting with Cold Front). So I don't know why it's freaking out.

The vanilla game doesn't handle extra survivors well in specific parts like the transition from map to map, where the game doesn't preserve them through campaigns. Workaround VScript code was made to handle this, but I can't say with certainty that it does a perfect job, and I've only made a guess as to why cola still spawns in the finale.
