How do I skip or don't encounter the spiders?
What do I need? Save before the encounter? Because I'm scared of spiders and I don't want to fight with them or use cheats.

Hello, you can turn off animal ambushes in the TLD options (via camp menu).

Spiders used to be indestructible Wild Wild West arachnotanks, but so many people complained the encounter got tuned a little more realistically. Plus now you get to keep your horse. They're still spiders though; yeech. Shoot first, count legs later.
