I don't think they were "removed". A lot of these features have to be reworked for the new version of Terraria and its modloader. This is the reason why a lot of mods still aren't compatible with v5.0.
I'm sure in due time, the seasons along with many other missing features will be readded. It seems the only thing that won't be returning is firearm reloading according to a comment on the github link, which I won't be missing, since the system was designed for vanilla firearms, and did not mesh well with firearms added by Calamity, Thorium, and other big mods.
Its been a really long time.
You gotta remember, Overhaul, is a Overhaul, it's in the name and will most likely take that long.
