Environmental hazards and enemy NPCs
I was wondering if this is being considered, to give more variety to the gameplay. For example, in certain parts of the map, Bread tentacles could emerge from holes or vents attacking players, and there may even be smaller versions of the monster

bread slugs 10 hp and do 2 damage and the little bloops coming out of the ground could explode like the bomb pumpkins

Right now the Bread monster is pretty static. He'll roar and bite if you come too close but doesn't exactly have any attacks (You can't code an NPC entirely in Hammer sadly). The green fissures coming out of the ground do explode though.

We are considering a replacement for skeleton NPCs to spawn around the map

We could probably use some trickery with trigger_push and trigger_hurt to have tentacles do damage. Should be possible to sync it with an animation in a convincing (but maybe not perfect) way

I was thinking the same thing, so small breads would hunt you around the map

Smaller bread monsters that attack players could maybe be reskinned Scream Fortress monsters like skeletons, Monoculus, Merasmus, or HHH. Lots of MVM campaigns feature normal merc bots hidden under a raccoon head or something. On the outside they look like a new creature, but underneath the models and animations are fully in-tact so it’s basically like giving them a hat.
