Build Units and Invade Planet?
I'm new to this mod but I've been experimenting with it and reading the guide. I still have no clue how to build ground units or invade enemy planets though?

You can find two buttons that switch Space/Ground buildable list, and you can build ground units if your selected planet have the required building such as factories.
After your ground units are built, you can drag them to orbit and move them above the enemy planet. Drag these units to the planet's ground slot to begin invasion.

If you are new to this game, I strongly recommend you play the original game before installing Remake, or any other major mod, to learn about the basic gameplay with the in-game tutorial. Good luck!

Thanks, yeah I figured it out but I still can't see ground units/buildings waiting to be built in the que? Also why are there only 3 maps? every planet I invade is one of three maps. I'm playing the first Campaign which said beginner so is that why?

You should be able to see base structures in the building lists such as imperial/rebel bases on a newly captured planet, and these structures are needed to build factories alike. And if you are asking about the building queue that shows the currently constructing units/structures, the ground one is on the right side, in orange color.
The entire map got over 100 planets, and it will be extremely exhausting if the mod devs have to make everyone unique. That's why remake is using generic maps, and it is possibly just a coincidence that you meet only 3 of them.

^ This is right. We have around a dozen ground maps in the current release but there are many more coming in the next.
