You can go to reports and on the top of page there is "mutagen level" and mutation cycle". At first time you need 128 mutagen points, next time 256, 512 and so on.
To which race you mutate - it's random.
If I can recall correctly, there's no way to disable mutation without modding the mod's files. There is however an option to prevent species change on mutation at the cost of either losing 1 mutation skill or move the doomsday clock forwards by 75 ticks.
I hope Bannerlord becomes more mod friendly in the future. It would be nice to have Paradigm Worlds in Bannerlord.
