Why on earth do the romans march around with their shields up and all hunched over?
Because quite frankly it just looks ridiculous.

It's the combat stance animation the game has. But why the hell have you applied it to marching everywhere? Or is it a bug? Though I think that's a slim chance.

You'd get tired as hell walking around like that all day.

If you guys don't want to change it is there any way I could change it on my end?

It's a design choice. I'm not an advocate for it so me trying to defend it would be pretty futile
