When you start Stronghold Legends there is a popup window you can use,

And when you are in Multiplayer, you can choose The map under Map selection, also in Kingmaker

i noticed that the player in Helm's Deep has a population size of 96 and the other 2 keeps have 179? is there a way to change that and how where you able to acheved a population size bigger then 128?

You can use the "No fly" rule, makes the map harder for the agressors
