Her stats could be like so:
Health: ≤ 125
Hunger: ≤ 125
Sanity: ≥ 275
+ Fast
+ Sanity boost
- Small health pool (can die easily)
- Small hunger pool
- Low sanity can cause instability, throwing volatile spells at random
Combined with the fact that she uses magic, and starts off with a magic weapon and probably starts off with her knowledge of magic like Wickerbottom, ranged magic attacks seem like her best preferred forms of attack.
These are just suggestions for you to consider into making a interesting character, as if she wasn't interesting enough already. The mod's fantastic, and I hope you'll expand upon her more! Thanks for your time, Nym!

I just tested out Nymph, and I can say that you did a pretty phenomenal job on her! Stats aren't exactly game breaking, but you should definitely tone it down a bit. Average states for a character is based on Wilson's:
Health: 150
Hunger: 150
Sanity: 200
I'm guessing you should stick around those stats if you really want a balanced character, and make revisions to counteract her upsides. Perhaps her increased speed can be counteracted by a small health pool, which encourages kiting, or having low sanity might turn this happy little witch into a unstable and cranky witch that can throw volatile spells at random and being a hazard to the environment, her peers, and herself.

Some in-game screenshots wouldn't hurt to show how your lovely witch looks like. Front, side, and back views holding and wearing various outfits/hats and tools/weapons. I'll have to test her out ingame to see if I can suggest any necessary stat adjustments. Otherwise, looks pretty promising!
