My ocd goes off when I see that you've excluded those possible combinations, lol, and I'd be personally interested in an Endless/Slow game.
I dunno what you would call them though. I'd call the endless/fast combo "Industrial", "Revolutionary", or "Despotic".
Depending on any plans you have for adding even MORE speed types, you may wanna consider renaming all 1 step gamespeeds (Endless/Slow, Slow/Normal, Normal/Fast) to things like Dynamic-Slow, Dynamic-Normal and Dynamic-Fast just to make things easier to understand.
Call it somthing like "Reality" or somthing like that.... Though that would be a bit tricky to code...
