I recommend looking at TKR's Euroduplex physics data and perhaps have it similar to that.
When a model is available, but I can't render it in orthographic view, I do indeed stitch several images of the same car. Perspective wrap tool helps here.
An example of a train made almost entirely in Blender is my Waratah B-set.
An example of a train stitched together from parts would be my AnsaldoBreda Marta CQ312. Thankfully, in the end you usually can't see a difference :)
My main tool is Photoshop. Here's how I made this mod in particular.
For the loco, I used my Avelia Liberty asset. That one I lifted from Transport Fever 2: I used the in-game camera tool to screenshot the train from above, then masked it, made it symmetric and evenly lit, separated it into base/decal/top layers, etc. To remake it into Avelia Horizon, I shortened the loco, added a second pantograph and replaced some radiators with solid panels.
The carriages for this train were a more manual process: I took a part of the loco and stretched it into a rectangle, then drew windows, panels and doors on separate layers. The decals were made by masking painted parts of the train or just adding patterns.

Regarding the dining car, I wasn't aware it was revealed already. Do you have an exterior reference for me? Would appreciate :)
I'll also add coupled sets in the future.
is there a reason why the maximum amount of cars is 8? real life they will run up to 9 cars (for 200 ish meters total)
and do you have a seperate designation, capacity and design for the resto car (should be the 4th car, which has fewer windows on the lower deck)?
