So I tested it and was able to change the preview image no problem multiple times. So just to make sure, in game, go to Menu/Workshop Upload/Update Existing Mod. Then input your mod ID, the url to your new preview image, and anything else you wish to add.

I know! I tried to fix it multiple times in TTS, I think that might be a bug when you "update".

It might be because your image says "Demo Mode" on it. It confused me at first! :)
