I reloaded a save with the Produce Exchange building and it was still there.

Try uninstalling and reinstalling the mod.

It happened with every save, saveterrrain and modded map

Not sure how that is possible since the mod still exists. Your save may have become corrupted.

Novu, all produce exchanges disappeared from my savegame recently!
