I advice you to use VIDE instead of Packrat
ps: you missed the texture to the left of the exit
Downloading the tool, if you don't have it, I'll leave you to figure that out, but as for the actual packing process, you open the tool, load the .bsp file for the map, click the Add button, then navigate to where in your Portal 2 files that you placed the custom texture and select the texture to add it in. After that, you re-save the .bsp file with the custom texture packed in, and you're good to go.
