I don't think there's any canon reason, I think it's just that the devs wanted her to look a little more youthful considering she's estimated to be in her mid-twenties.
Iirc, in Portal 1, she had a bit of greying hair. It doesn't really fit the concept of the game to have some older, more fragile protagonist pulling off these death-defying stunts
