Yeah, apparently the way Rimworld calculates animal spawns goes haywire if you tell it you want a 0 in 0 chance of blue-painted lobsters spawning in the wild.
IT WAS THIS MOD!? I WENT CRAZY TRYING TO FIX IT LOL
However, my second jumpscare was way more... special: it happened during the game load removing the whole game menu and leaving me only with an amazing wallpaper of a giant blue lobster menacingly hovering over the default background of the planet.
Are you fed up with your lobster committing crimes against nature? Well, now you can download a simple mod to JUST get new textures and the American lobster.

I've added a setting option to disable the jumpscare, and now it should save correctly!
I have a pending mod that only includes the american lobster + textures, if you only want cute lobster then I suggest you to turn everything off.
Deleting the assembly file may cause problems with the lobster statue, but if you don't use developer mode you won't notice a thing and it's totally fine to delete it again!
For those who don't know, in-game you can search for the mod, "open folder" and delete:
...\1.6\Assemblies folder
or in RimSort right-click and "open folder"
