Broski would be your best bet in asking about the lyrics of the cathedral chanting as he's the main composer. I've linked the workshop page for the original upload of Repented at the bottom of the description, I'd suggest leaving a comment there asking him.
This was intentional, i personally felt many of the normal boss tracks felt a little too similar so i made use of some of the non-vanilla Repented tracks for replacements to give a better sense of differentiation between them (Gluttony and Lust's themes for main boss tracks, Fiend Folio boss theme for Alt Path's bosses, and Sloth's theme for Ambush/Challenge rooms).
It is intentional, stripping it down to work with vanilla means its wide more compatible with mods that would otherwise be incompatible due to requiring both Fiend Folio and Revelations, alongside Soundtrack Menu.
I'm not too sure exactly how to implement the FF-specific files, but if i figure out how to get it working without Soundtrack Menu, i'll try to add it here
