Sanity becomes your most precious recourse here

At 50 sanity and lower his walking speed and DMG will slightly decrease;
At 25 sanity and lower his walking speed and DMG will highly decrease;
At 10 sanity and lower he will have minimum one chance per day to faint, which makes him vulnerable to shadow attacks and other dangerous things.

DMG and walking speed increase in night (and dusk, but not that much).

Hunger will increase from time to time, so be careful.

However, sanity drain increases too.

While they are near each other, their DMG and walking speed increase, and their sanity and health restores.

Gillian's perks:

Doesn't get any negative effect from eating taffy, and sweet things restore her sanity a bit.

As gentle lady should, she's resistant to cold pretty much. I don't know how it works, but IT DOES!..

Stephen's perks:

His playstyle is pretty fast, and this helps him to chop trees and cook food faster.

As you can see, his sanity isn't that high, so. Yep.
