Concord Grapes (B: Vitis Labrusca)

Description
Atypical when it comes to wine production, the concord grape offers a unique experience in wine. Grape flavoring is based on this varietal and this reflects in the wine. ABV ranges from 7-14%. Sugar is often added to balance the acidity, leaving considerable amounts of residual sugar to create a semi-sweet to sweet, fruity type of wine. While often criticized for its "foxy" and "grape candy" notes in the world of finer wines, many enjoy it. It is not a fault, but a feature, that the flavor of this grape is so popular to be used in commercial grape and grape-flavored products such as jams, pies, candies, and popsicles. Keeping the product cooler during fermentation can help minimize the "foxy" flavors.

The vine is native to North America, and the United States is the highest producer of this varietal, particularly in the northeastern regions however much is grown on the west coast as well in California and Oregon. It is highly resistant to brutal winter temperatures and conditions, and is highly vigorous. Common as a backyard grape in North America, many people grow these vines at home for use in homemade pastries, juices, jams, jellies, preserves, desserts, ice creams, table wine, and other such products.
