Saving is something the ironman autosave does often, but not often enough to stop us. Specifically it does so at the beginning of each of your turns in combat, as well as after most actions at base. This means that there is usually a period of time with unsaved actions. In tactical combat, that time is anything between when your turn starts and the when the enemy turn ends. In the strategic layer, the game usually saves when you look at or leave the hologlobe, and when you accept or cancel an action.

Force close the game after something happens that you dont like, but before the autosave sets it in stone. You can use either Alt+f4(Alt+f12 in long war) or play in windowed mode and click the X if that doesnt give you an aneurysm. This works both for the ground combat and interceptor combat, so you can save both soldiers and pilots.
