1. Activate the Yeast: In a large mixing bowl, combine the warm water and sugar. Sprinkle the yeast over the water and let it sit for 5-10 minutes until it turns frothy.

2. Mix the Dough: Add the olive oil and salt to the yeast mixture. Gradually add 450 g of flour while stirring with a wooden spoon until the dough starts to come together.

3. Knead the Dough: Transfer the dough to a floured surface. Knead for 8-10 minutes, adding more flour if needed, until the dough is smooth and elastic. It should be soft but not sticky.

4. First Rise: Shape the dough into a ball and place it in a lightly oiled bowl. Turn it to coat with oil. Cover with a damp cloth or cling film. Leave in a warm place for 1-1 ½ hours until doubled in size.

5. Punch Down and Divide: Punch down the dough to release air. Place it on a floured surface and divide into 2-3 portions for your desired pizza sizes.

6. Shape the Dough: Roll out each portion into a circle or desired shape using your hands or a rolling pin.

7. Second Rise (Optional): Let the shaped dough rest for 10-15 minutes to make it easier to handle and top.

8. Preheat the Oven: Preheat your oven to 240°C and place a pizza stone or baking tray inside to heat up.

9. Add Toppings and Bake: Add sauce and your favourite toppings. Carefully slide the pizza onto the hot stone or tray. Bake for 10-12 minutes or until the crust is golden and the cheese is bubbling.

10. Serve: Take the pizza out of the oven and let it cool for a minute before slicing.
