Very enjoyable game, but it requires a lot of TLC using mods in order to stay modern and relevant. And I don't mean the "creations" added by the Anniversary Edition.

If you love tailoring your experience to you and you're willing to sink time into that, this game is fantastic.
However, if you don't, and you play this game vanilla, be prepared to face a lackluster magic system, forgettable companions, and disastrously mindless melee combat. This game is still much better than Starfield, even today. You might even really enjoy it if you just let yourself be immersed in the gorgeous world and amazing soundtrack. But, if you're looking for depth, I find this game doesn't offer much other than what you put into it yourself. Though I'm not sure if that is because I have >1600 hours in the game or if I've simply grown up since playing it for the first time.

Its modding scene still is vibrant. With over a decade of hard work put into it by incredible individuals, there's bound to be something that piques your interest, whether that's ultra-realism or scantily clad cat-girls.

All in all, Skyrim is a decent game elevated to greatness by its modding community. Whether it reaches that greatness is entirely up to you. It can go the distance, but only if you put the time in. If you just want something that's good out of the box, look Elsweyr. ;)
