Haven't played Galactic Civ. Between Sins and Endless, it's tough. Sins is an RTS at heart -- it has a 4X tech tree, but if you don't like RTSes, you won't like it. Endless Space is very close to Master of Orion, with a more interesting combat resolution mechanic. If you're looking for pure 4X, I'd go with Endless Space. If you like non-campaign based RTS, Sins.
