If you like automation or factory games I can't recommend Satisfactory enough. Unlike many other games in the genre this game has a story and multiple different progression trees, with one even relying on exploration of the environment.

Ore nodes are infinite and set in rate so unlike say, Factorio, this game is not about maximising belts and constantly adding new miners but instead balancing belts and utilising the resources to maximum efficiency. These rates are somewhat fixed (but can be increased through technology to a point).
