There are only a few cases we know of where Steam reports historical playtime that is far outside what you would expect for a particular game.
The Steam client does attempt to track offline play, and will update the Steam servers when you reconnect to the network. It's worth restarting Steam and making sure it is connected to the Steam servers.
Sometimes during Steam regular maintenance, players find previously recorded playtime is not showing. If this is the case, after a few hours the playtime should be displayed correctly.
Some games use a secondary launcher that may interfere with Steam's ability to record playtime. We see this with many Massively Multiplayer (MMO) or Free to Play style games. Make sure you are launching and running the game through Steam.
Unfortunately, Steam Support cannot modify or reset your account's playtime for any game.
