An update of my issue with streaming surround sound using the AppleTV:
Today I tested my Apple TV at a friends house, using his PC as a host for streaming.
My friend has a steam link setup in home using a xiaomi mi box. Using the xiaomi mi box the surround sound is working fine from his PC. When I replaced the xiaomi mi box with my Apple TV to test surround sound, we got exactly the same issue I had at my own home. There is no sound when using a differrent setting than stereo.
After this test it became clear that the Apple TV is the problem and not the host PC. Is there anyone who can confirm this? And maybe have a solution?

I tried differnt options on client and host side.
Then I searched on internet, found your post, tried to switch the sound to Stereo and it worked.
@Valve, is it a known issue ?
there are many link apps, windows, linux, mac, tv, android etc..
on most, its in link app -> settings -> streaming -> advanced
