Weird things you've had on ice cream?
Marshmellow fluff, or fluffernutter. --- sugary goodness

Warmed chocolate that hardens on the ice cream.

Black licorice. Yes, it's true and it's surprisingly good!

I quite liked those "Cookie Time" large cookies, in which you sandwich together with some ice cream in between two of them or just on the top of one.

Brownie bites are also great to add with ice cream.

To be honest I’m not really sure. All I remembered was there’s vanilla in it.
there was once a fly on my ice cream. that was weird. NOM
I think I had one with pieces of crystallised ginger in it and when it's really cold it becomes really chewy which is kinda really nice in the ice cream. I'm pretty sure that's a thing I had like 3 times but I can't remember maybe I got it confused.

on icecream or IN icecream?

the weirdest ice cream flavors I have had and liked :

**tomato
**tomato & basil
**carrot
**cumcumber
**green tea (non sweet macha poweder)
**squid ink (also non sweet)
**hot ginger (as in fresh ginger root)

so when you say weird topping.. it really matters which type of icecream you make.
for examble I can see an raw onion icecream work.. with chopped dutch herrin chunks as topping.

hering with onions is a classic.. herring is also always served cold.. (though it needs to warm up a bit to get it's flavour out.. a bit like some cheese need 10-30 min out the frudge before serving..
and to present the onions in an icecream.. is an interesting texture..

salted crisps (especially thicker wrinkled ones) combine superb with banana.
(I enjou eating a fresh banana taking a bite.. than a hand of salted crisps.. and so on
I not mix them in my mouth as than the textures go off.. and it becomes bad but in quick succestion it is great..

icecream should make crisps less fast soggy... so servicing banana icecream with crisps or even fries salted fries as topping.. may be a good thing.

another unexpected nice flavor profile is very dark chocolate with mackarel (it need to be non sweet bitter chocolate butthe fatty fish and the dark bitter chocolate match very well)

I can see a high fat (made from double fat cream) non sweeted made with very high pure dutch cocoa powder icecream icecream with macharel chunks on top work

ok one more.. black licorice is great.. and it combines good with fruity winegums (we even sell things that are 50% very dark dutch black licorice 50% winegun in one candy)

I can see a fruity icecream like strawberry or orange topped with a black licorice sauce/swirl work really well.

Wow! The hering is an interesting topping. I may need to try it. I didn't know hering should be served cold.
i was in ireland and someone bought an ice cream from the ice cream truck for me and it was vanilla with mint. it was disgusting
