You can use the same method, but select the 'hide this game' option.
The following will remove it 'permanently' from your account, click the game once, there is a support option on the right side of the screen, select that, you will see the option on the new menu that opens, usually at the bottom "I want to permanently remove this game from my account". Once it has gone, it has gone for good.
The process is done through the Steam Support website, where you can select the game and choose the option to have it restored to your library. Permanently deleting a game from your account essentially hides it, but the license remains tied to your account, allowing for easy restoration without needing to repurchase the game.
