So the mission was to destroy artillery. What I think happened is the conversation options may have been a bit deceptive? There were 2 that, to me, felt like I was going to fight either way. Are there an endless amount of missions in this game if I choose to take them or is there a set amount that force you to a eventual ending?

Mostly enjoy the rhythm of the missions, but several times there's an enemy Neko that is 1% to hit for the very best pilots and even saving my best missile volleys for it just will not go down. ...and annoyingly the maps have huge swaths of deep woods that it's perfectly happy to hide in and refuses to leave.
