The four built-in cars are quite different, but it is also possible to make more realistic cars with the vehicle editor and many players have done so and shared those in the Steam Workshop. Still, the game is not aiming to be super realistic physics-wise.
I don't know for sure how it runs on Ally X, but people have reported most levels and games work just fine on Steamdeck. There are also lots of options to make the graphics lighter and people have managed to run the game with pretty old machines.

Edit: Ah, that probably wouldn't make big change since default display refresh rate of rog ally is 120 Hz. Steam Deck usually stays at 60 fps with the same default option.
