Extra Conditioning might also be a nice thing to have, but then again Gunslingers aren't as dependent on RnG (not RNG) as Assaults are.
I think "Hitman" is more suitable a name than "Sentinel", considering the perks.
I do get the impression that the Sentinel tree should either be a stealth/assassin build (aka "Hitman") like the Saboteur (Shinobi), or leverage the fact that Holotargeter doesn't break concealment and be a stealth/support build (aka "Spy").
Swapping out Covert for Phantom might also be a good idea, since first tier perks are pretty role-defining.
Speaking of which, I wonder if the Silent Takedown skill from mods can be made a Sentinel perk?
Overall, I really like the Pistol/Holotargeter concept. When I run with Sharpshooters I almost never use the Holotargeter, since I lose out on so much damage output. But the Gunslinger's lower damage output makes using the holotargeter a viable choice.
Center Mass is a solid choice. Hit and Run is also good. Lightning Relexes is also attractive, but there may be a bug if players can pick both LN and Shadowstep.
