About the easy mode, to start, I'm planning on adding a Challenge called "The training of Agnis" (or something among the lines) which will be almost the same as the real thing except the body will take damage normally but you'll lose the soul form when it does (bringing you back to the body like when you use the ghostbook). Nothing is set on stone for the easy-mode but that's what i have in mind.
About immunities, yes, the body is intended to be fragile and die even if you have an item that makes you immune to explosions or if your soul is immune. When the soul leaved the body, it takes all the items (but the active) from the body, so it's implied that there would be no effects on the body.
About the Dark form "panic button", remember that the dark form also refunds bombs...if you are being chased by a huge mob horde, you can always leave a bomb to slow them down and turn Dark just before the bomb explodes (that would still refund the bomb ;) )
I hope you can continue to enjoy the mod and, yes, easy-mode will be a thing for sure, BUT that wont be the focus of the mod, just a plus.
