It's been a few years, so you probably have the answer but sell them to a Slaver. The Slavers are randomly found at city taverns (I think they stay for a couple of days and move on). Just talk to him and get to the option to sell. Obviously, higher quality prisoners sell for more money, so throw out the low end dudes if space becomes an issue.
