So I noticed that the turret core we have right now has a limited coverage angle, perhaps a variant with a ring to rotate on could be considered?

Noted, I will definitely add one in the future
how do i make the turrets not turn?
also they always move in the oppisite direction

You can't make them not turn yet, I'll probably add a module.that doesn't allow them to turn. Regarding them moving in the opposite directions, mount them in a way that makes them face directly forward from where you're sitting in the driver seat. If that's not the case, then it's likely a conflict with some addon; try disabling some and seeing if it fixes itself
don't know what these errors might mean, but copying both just in case, I have an issue with the TOW launcher where the shots just fall to the ground and cause errors.

I noticed this one, might not be part of the TOW issue though,

just now noticed after moving, there are just large rocket props on the ground where I supposedly fired, just props, no explosion if touched, shot, or thrown.

when i atempt to spawn the turrets they spawn as error's (is this normal how do i fix this?)

Sometimes assets for GMod addons refuse to load, try reinstalling the addon and restarting GMod
nvm i got it working it just forgot to restart gmod
