Well, at least it can be delayed for 200 years from the game start without breaking achievements. Maybe it could help, at last... I changed the game rules, seems the war doesn't start now. I have another 120 years to prepare.
But still, why do religions that accept witchcraft join? It seems illogical. Only those who see it as criminal or shunned must join, I think. Maybe the mod developers would consider the idea to change it, so Hindu/Buddhism/other religions that see witchcraft as accepted or virtuous don't join the coalition?
Remember that this attack does not have exclusively religious connotations. You have been deemed a very dangerous figure because you rule an empire and at the same time wield significant magical power. That is why you have been labelled a witch (sorcerer) who poses a global threat. Even those who consider magic to be valuable may not be happy that too much power (magical and political) is in the hands of one man - especially when that man is your neighbour.
(Rulers who are witches are indeed less willing to join this war, but it does happen, especially if they can gain something from it).
However, there are ways to reduce the size of the coalition. Your allies and positive relationships are unlikely to join the war against you, as are rulers over whom you have strong hook and those with whom you have truces. Rulers involved in any war will also not join the coalition. You can use this knowledge to eliminate the most serious threats/closest neighbours from the coming war.
On the other hand, the most powerful magic (armed AS, ultimate spell) and advanced regiments (demonic knights, golems) can help win such a war despite the overwhelming numerical superiority of the opponents - however it requires clever planning, because usually the coalition strikes before you reach full power.
The coalition is coordinated and formed as a result of the hunters' machinations - if you keep their leader in the dungeon, the grand coalition will not be formed.

Neighbor rulers who joined the coalition war mostly had 50+ opinion for me, some of those even around 100. I created a custom empire in Egypt (I roleplay the Egyptian magical civilization or something like that) and have about 50 diplomacy + max lvl of fame, which alone gives rough 70 opinion, but maybe they just feel that I pose a very large threat for them...
So, I'd ask some questions, regarding your answer and your mod in general.
What is the hunter's leader? Is it the hunter with the largest skill experience, or anyone can become a leader? How exactly they can influence other rulers and make them form the coalition? How the willingness of rulers to join the coalition is calculated, regarding that they can join even having a large positive opinion, in some conditions?
I wonder, maybe hunters have their own conferences where they discuss how to eliminate magic and demons to make "the earth for humans" or so? Which is the internal hierarchy of witch hunters in general? There aren't many information about that in the game (what is logical ofc, I think, your enemies must strike from the shadows), but I'd be happy to see some answers!
Also, I suppose witch hunters can have this trait as a secret and pretend to be a friendly, right? I played as an adventurer mage before landing (I love play adventurers, VERY much) and sometimes I faced a "Secret Mission" contract ;)
I suppose they can sneak to your court and scheme against you, too? And potentially, even your good friend or neighbor ally can be a hunter, right?
By the way. I also saw, you mentioned that hunters were initially designed just as NPC feature for making challenges for players, and only then you allowed players to create witch hunters, too. So, can you get a witch hunter trait yourself somehow, and how characters become them generally? I think I would still prefer playing as a witch, but taking the other side would be interesting option, too.
By the way, the grand coalition still stroke, as it seems there is no way to change game rules after the game start. I managed to whitepeace it somehow by moving all my armies to the coalition's leader, this freaking witch huntress from Georgia, and occupy her capital xdddd
Maybe I'd even tried to win (!!!) by quickly occupying all kingdom of Georgia, but their combining powers were too overwhelming, I had 5-8 simultaneous sieges, and I think it was just the beginning.
Now I have Belial as my marshall after a demon summoning and wonder what he will take from me after 10 years and whether I'll need to reload my save after that lol.....
A tough situation, but I hope your mod has ways to fix it. It's great!!! And extremely inspiring!!
Hunters can use the Stop the Witch interaction to start a war against the witch, but the AI uses a different mechanic – when the crisis begins, the hunters' leader receives an event and begins preparations for a great war (at which point he also sends an ultimatum to the player).
The war begins some time later – at the beginning, every ruler who meets the conditions (e.g. is not involved in the war) receives an event in which they can decide to join the attacking side. The AI takes into account whether you have a special relationship (friend, lover, etc.), whether you are allies, and so on. The numerical opinion is not very important here.
Hunters have a simple hierarchy: there is a leader and there are regular hunters. The leader can spawn them and coordinate them, but regular hunters can also act on their own initiative.
There are basically three ways to become a hunter:
1) You can inherit it in some cases (see the description of the witch hunter trait).
2) You can use the ruler creator to create a hunter.
3) In some cases, rulers (non-witches) have the option of deciding to summon a hunter when they know of a witch in their area. This sets off a chain of events that can result in a brave or zealous ruler becoming a hunter.
From what you say, the situation is difficult and I don't know if you'll be able to do anything at this stage - but I'm keeping my fingers crossed. With this mod, sometimes the first attempt doesn't go according to plan ;p
