Do I have to download every mod?
Or is there a mega mod with all of the mods in it

You do have to download all of the mods you want, however there is a collection that will help. Make sure not to include any storyteller mods you don't want, as the faction modules contain storytellers so they will just be bloat (and for the two joke ones, also slow your game down)

man, i remember a few years ago there were only a few mods for vanilla expanded but now there is so many, I am overwhelmed as to which to install...

Just go down the collection bit by bit. Look into the ones that interest you first and if you get overwhelmed it's ok to stop and take a break. In fact with how many VE mods there are now it might be best to not install them all at once just so you don't get overwhelmed by new content when you play haha.

Once you subscribe to a mod you'll see a green checkmark on it in the collection (...eventually, it may take a bit to update) so you'll know what you've got and what you don't have.

is pretty spot on! Some of the mods require DLC (though they're clearly marked as such) so keep that in mind as well
I pretty much download most if not all since they're kind of all compatible and like Sims bundles of content. Can do without some but adding more doesn't cause too much detriment unless something added by one of them is something you dislike. Best to just go down the list and add what looks cool, won't hurt to experiment.
