Śląsk (english Silesia) is not only a Polish region, but also a minority with their own dialect of Polish Language.

Kashubia is also something that is both a region, and an ethnicity in Poland. They have their own language, which is a mix of Polish and German.

Okinawa. Fun fact - this Japanese island was in fact an independent nation before it was absorbed by Japan if I remember right. And there is a movement there that wants them to be independent.

Transnistria. Pretty much a neighbor of Moldova, and country only recognized by Russia, and in the past by USSR.

Jersey. An Island near Normandy, and their own autonomous region.

Papal State. Because why not :P.

Xinjiang. Chinese region with a minority of mostly Muslim people called Uyghurs.
