I'd suggest "Franco-American" and "Ibero-American" for the French and Iberians in America, it just sounds better.

Acadia is what's today Nova Scotia, until they got deported all down the East Coast. I think Acadian would work much better for French colonial cultures by the East Coast, instead of on the opposite side of the continent

Bretagne and one of the Irish countries sometimes stay independent for long enough to colonize parts of America, there could be a Colonial Breton and Colonial Irish culture for that. You could call it American Celtic or something similar, for example.

Just a point,, Creole would be the culture for a 'white/European' French culture in Louisiane for the time period. Créole in the times before 1940s was equivalent to the Spanish term, Criollo, a European born in the New World. Coversely, with the arrival of plantation economies, African slaves and Mulatto (Mulâtre) woudl become a majority in much of the region of Basse Louisiane. If you wish to include 'Cajun,' then there should be an event where a Cajun migration occurs with francophones from Canada settle southwest Louisiane, replacing African slaves (could be replaced with their language of the period, Kreyol, a mixture of Igbo-French-Spanish-Houma), Mulatto or the Creole. However, this should accumulate a decline in dev in Acadie and Canadian French provs. Further, the Haute Louisiane, shoudl have cultures such as Missourien, etc...

I woudl advise, making much of these cultures mixtures of non Europeans with Europeans, to give some realism toward how these colonies functioned. This however, would be contingent upon events for colonial nations. So, if Spanish colonial powers decides to favor Juan Ginés de Sepúlveda opinions, then the natives do not mix and there is not Mestizo, Castizo, Mulatto, Zambo, etc populaces in Spanish New World.

Can we get New Netherlander or Dutch American for the Dutch on the American East Coast? Historically they dominated there for quite a while and were fairly distinct from the mainland Dutch, and the Netherlands quite often sets up colonies there in game, too.
